VALENTINE’S DESSERT – CHILE CHOCOLATE STRAWBERRIES

You can’t go wrong with healthy chocolate covered strawberries for a sweet Valentine’s Day dessert!

What you’ll need (You can find all of this at Trader Joe’s, Whole Foods or any grocer that carries a good organic selection):

1 Pack of Fresh Strawberries

1/3 Cup Organic Coconut Oil

1/2 Cup Organic Cocoa Powder

Sprinkle of Sea Salt

2 Cups Organic Raw Honey

8-10 Dried Chile De Arbol Peppers (you’ll need 2-3 Tbsp Chile Infused Honey)

Sprinkles or Nuts of your choice (we did cashews and walnuts)

Make the cutest and healthiest Valentine’s Day Dessert for your loved ones – and it’s easy!  These are Chile Chocolate Covered Strawberries!  If you know me, you know I hate to cook, and frankly I am scary in the kitchen!  Yes, now that I am a wife and mom, I try to cook something at least once a week, because we all know pre-made food at the store and eating out isn’t the best for you, but man it’s hard!  Especially when you don’t have a lot of time and you don’t have any recipes memorized!  I know that when I do cook, my husband is very appreciative and happy!

So on that same note, I know the way to my hubby’s heart is through his stomach, and he has a huge sweet tooth, so that’s exactly what he will get this Valentine’s Day!  My girlfriend Shenae Grimes, who happens to be an amazing actress and blogger over at LostInLaLa.com, is helping me out with this one!  She loves to cook and bake and is actually good at it! AND she loves making healthy stuff that still tastes amazing – yay! Shenae did a little research and came up with this easy recipe for Chile Chocolate Covered Strawberries and made them with me!

Recipe:
Heat honey and chopped chile peppers on medium until bubbling and turn down to low to simmer for 20-30 minutes dependent on how much smoky spice you want.  Strain through a sieve bit by bit into a jar you want to store the honey in.  Allow to cool with lid off completely before chucking in an extra pepper for good measure and sealing it up!
Heat honey and coconut oil by placing them in separate glass jars/measuring cups seated atop a double boiler (see above). If you don’t have one, you can achieve the same results by place a saucepan on top of a pot of boiling water and placing your glass containers inside the saucepan until the coconut oil and honey are melted.  Once melted, combine honey, coconut oil, salt and cocoa powder in a bowl.  Simply dip strawberries one by one into your chocolate mixture and set aside on a parchment paper lined baking sheet.  Repeat dipping process to achieve the thickness of chocolate you desire and dip into sprinkles or finely chopped nuts for an added delicious texture to your treats.  Once finished, place the strawberries into the fridge to cool and harden before serving!
